- 1-1/2 lb. ripe tomatoes, cored and cut into thick wedges
- salt and freshly ground black pepper
- 1/4 cup evoo
- 1 medium onion, minced
- 1 Tbsp. minced garlic
- 1 Tbsp. tomato paste
- Large pinch saffron threads
- 2 tsp. Spanish pimento (paprika)
- 2 cups Spanish rice or (arborio works very well)
- 1/2 lb. shrimp, cleaned
- Minced parsley and basil for garnish.
