Ingredients
- 2 12 oz cans white albacore tuna, in water, drained well
- Scant 1/4 c yellow onion, choped fine
- About 1-2 T finely chopped red pepper (I was using up a couple of strips I had left over in the veggie bin)
- 3 teaspoons Dijon mustard
- 1 large egg, beaten
- 1 teaspoon freshly squeezed lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Sprinkling of dried parsley
- Sprinkling of Old Bay Seasoning
- 1/4 c +/- italian seasoned bread crumbs
- 1/2 c panko bread crumbs
- olive oil, for sauteing
- LEMON caper SAUCE
- 1/4 c Dukes real Mayo
- 2 T sour cream
- 1 T capers, chopped
- juice and zest from 1/4 a lemon
