Tuna Croquettes With Lemon Caper Sauce Recipe

Ingredients

  • 2 12 oz cans white albacore tuna, in water, drained well
  • Scant 1/4 c yellow onion, choped fine
  • About 1-2 T finely chopped red pepper (I was using up a couple of strips I had left over in the veggie bin)
  • 3 teaspoons Dijon mustard
  • 1 large egg, beaten
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Sprinkling of dried parsley
  • Sprinkling of Old Bay Seasoning
  • 1/4 c +/- italian seasoned bread crumbs
  • 1/2 c panko bread crumbs
  • olive oil, for sauteing
  • LEMON caper SAUCE
  • 1/4 c Dukes real Mayo
  • 2 T sour cream
  • 1 T capers, chopped
  • juice and zest from 1/4 a lemon

Looking For Something New To Do With Tuna Today, And At The Suggestion Of Notyourmomma And Lunasea, I Decided On Tuna Croquettes. These Croquettes Are Based On A Recipe By Alton Brown. I Changed It Somewhat To Accomodate What I Had On Hand To Use, And, I
