Eating Wells King Ranch Casserole Recipe

Ingredients

  • 1 1/2 cups chicken stock, reduced-sodium, defatted
  • 1 cup skim milk
  • 1/2 cup cornstarch
  • 1/2 cup nonfat yogurt, plain
  • 1 can tomatoes, drained and chopped
  • 1 can chopped green chiles, 4 oz. size, drained
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • salt and pepper, to taste
  • 1 1/2 teaspoons vegetable oil
  • 1 large onion, chopped
  • 1 red pepper, cored, seeded and chopped
  • 2 cloves garlic, minced
  • 2 cups chicken, diced skinless cooked
  • 10 corn tortillas, cut in quarters
  • 1/2 cup cheddar cheese, reduced fat, shredded (sorry, I use regular at this point!)
