Ingredients
- 1 1/2 cups chicken stock, reduced-sodium, defatted
- 1 cup skim milk
- 1/2 cup cornstarch
- 1/2 cup nonfat yogurt, plain
- 1 can tomatoes, drained and chopped
- 1 can chopped green chiles, 4 oz. size, drained
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon chili powder
- 1 teaspoon oregano
- 1/2 teaspoon cumin
- salt and pepper, to taste
- 1 1/2 teaspoons vegetable oil
- 1 large onion, chopped
- 1 red pepper, cored, seeded and chopped
- 2 cloves garlic, minced
- 2 cups chicken, diced skinless cooked
- 10 corn tortillas, cut in quarters
- 1/2 cup cheddar cheese, reduced fat, shredded (sorry, I use regular at this point!)
