Ingredients
- For Sauce
- 2T butter
- 1T olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2T canned chilis(green or jalapenos, depending on your heat preference)
- 1/2 cup white wine
- 3 cups heavy cream
- about 3 bunches cilantro(3 cups or so)
- 1/4 cup sour cream
- juice from 1/2 lemon or 1 lime
- 1t whole coriander seeds(can sub ground)
- 1t whole mustard seeds(can sub ground)
- 1/2-1t whole peppercorns(can sub fresh ground)
- sea or kosher salt
- For Fish
- 6 4oz swordfish steaks, 3/4-1 inch thick
- 1T olive oil
- lemon or lime juice
- sea or kosher salt and fresh ground pepper
