Tetrazzini Recipe

Ingredients

  • 1 roasted chicken -- purchased, or about 3 cups leftover cooked turkey
  • 8 oz. spaghetti -- or linguine, uncooked
  • 12 oz. fresh asparagus -- trimmed and cut into 1-inch pieces
  • 8 oz. mushrooms
  • 2- 3 medium sweet peppers -- red and/or yellow, seeded and cut into 1" pieces
  • 2 Tbsp. butter
  • 1/4 cup all-purpose flour
  • 1/8 tsp. black pepper
  • 1 can chicken broth -- (14 oz.)
  • 3/4 cup milk
  • 1/2 cup shredded Swiss, Parmesan - or whatever cheese you like
  • 1 Tbsp. lemon peel -- finely shredded
  • 2 slices sourdough bread -- cut into cubes (about 1-1/2 cups)
  • 1 Tbsp. olive oil
  • 2 Tbsp. fresh parsley -- snipped

Description

This Is A Good Way To Use Up Leftover Turkey Or Chicken. The Dish Could Be Divided Up In Two Smaller Pans -- One For Now & One To Freeze For Later.
