Ingredients
- 1 roasted chicken -- purchased, or about 3 cups leftover cooked turkey
- 8 oz. spaghetti -- or linguine, uncooked
- 12 oz. fresh asparagus -- trimmed and cut into 1-inch pieces
- 8 oz. mushrooms
- 2- 3 medium sweet peppers -- red and/or yellow, seeded and cut into 1" pieces
- 2 Tbsp. butter
- 1/4 cup all-purpose flour
- 1/8 tsp. black pepper
- 1 can chicken broth -- (14 oz.)
- 3/4 cup milk
- 1/2 cup shredded Swiss, Parmesan - or whatever cheese you like
- 1 Tbsp. lemon peel -- finely shredded
- 2 slices sourdough bread -- cut into cubes (about 1-1/2 cups)
- 1 Tbsp. olive oil
- 2 Tbsp. fresh parsley -- snipped
Description
This Is A Good Way To Use Up Leftover Turkey Or Chicken. The Dish Could Be Divided Up In Two Smaller Pans -- One For Now & One To Freeze For Later.
