- 1/2 teaspoon salt
- 1/4 teaspoon dried oregano, crumbled
- 1/2 cup dry white wine or dry sherry
- 2 dashes Tabasco
- 2 tablespoons Spanish olive oil
- 4 large red potatoes, peeled and sliced 1/4inch thick
- Salt and freshly ground black pepper
- 1 small bunch flatleaf parsley, leaves only, chopped
