Ingredients

Buttermilk Dressing:

  • 2 limes
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh cilantro
  • 1 clove garlic, peeled and quartered
  • 1/2 cup mayonnaise
  • 2 ounces mascarpone cheese, cut into pieces
  • 1 cup buttermilk
  • Salt and pepper

Salad:

  • 1 tablespoon canola oil
  • 1 tablespoon butter
  • 4 fresh peaches, peeled, pits removed, and cut into wedges
  • 1 head iceberg lettuce, core removed
  • 1 head Romaine lettuce, spine of leaves removed, rinsed and dried with a salad spinner, and torn into bite size pieces
  • 1 tablespoon finely minced peeled fresh ginger (about 1/2-ounce ginger root
  • 2 English cucumbers, peeled and sliced into 1/4-inch rounds
  • 2 large ripe tomatoes, cut into wedges
  • 2 ounces blue cheese
