  • 1 ounce dried porcini mushrooms
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large onion, diced
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon chopped garlic
  • 1/4 cup brandy
  • 1/2 pound Arborio rice
  • 1 bay leaf
  • 4 cups chicken stock or canned broth, warm
  • 1/2 cup Parmesan cheese
