Ingredients

Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup butter flavored shortening, cold (recommended: Crisco)
  • 1/2 cup cold water

Filling:

  • 1 teaspoon olive oil
  • 1/4 cup sliced boneless pork cutlet
  • 1/2 cup red wine (Merlot preferred)
  • 3 tablespoons butter
  • 3 medium Granny Smith apples, peeled, cored, chopped
  • 1 medium pear, cored, chopped
  • 1/2 medium orange, zested and juiced
  • 1/4 cup minute tapioca
  • 1/2 cup golden raisins
  • 1/2 cup dark raisins
  • 2 1/2 ounces dried cherries
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon

Caramel Glaze:

  • 3 to 5 tablespoons butter
  • 3 to 5 tablespoons light corn syrup
  • 1/2 cup brown sugar
  • 15 to 20 walnut halves
