- 1 teaspoon allspice
- 1/2 teaspoon ground cinnamon
- Freshly grated nutmeg
- 2 tablespoons chopped fresh thyme leaves
- Small handful cilantro leaves, finely chopped or 1/2 a palmful ground coriander

- 2 tablespoons cider vinegar
- 2 tablespoons dark brown sugar
- 1 tablespoon Worcestershire sauce
- 1 lime, juiced
- 1 cup tomato sauce
- 8 rolls, soft or crusty, split
- Chopped scallions, for garnish
- Chopped pickles, for garnish
- Chopped cilantro leaves, for garnish
