  1. 2 large artichokes ( 1/2 pound each)
  2. 1/2 lemon
  3. About 7 cups beef stock or canned low-sodium broth
  4. 3 tablespoons extra-virgin olive oil
  5. 2 carrots, cut into 1/4 -inch dice
  6. 1 onion, finely chopped
  7. 1 celery rib, cut into 1/4 -inch dice
  8. 1 medium leek, white part only, quartered lengthwise and thinly sliced crosswise
  9. 1 medium zucchini, cut into 1/2 -inch dice
  10. 2 cups arborio rice
  11. 1/2 cup dry white wine
  12. 1/2 cup freshly grated Parmesan cheese, plus more for serving
  13. 3 tablespoons unsalted butter
  14. 1 tablespoon chopped parsley
  15. 1 tablespoon chopped chives
  16. 1 tablespoon chopped basil
  17. Salt and freshly ground pepper
