Ingredients

  1. 1 cup pearl barley
  2. 2 1/2 cups vegetable stock or water
  3. 2 tablespoons vegetable oil
  4. 1 large egg
  5. 1 1/2 sticks unsalted butter
  6. Six 12-ounce chicken breasts on the bone, with skin
  7. Salt and freshly ground pepper
  8. Roasted asparagus, for serving (see Note)
