Grouper with Cucumber Salad and Soy-Mustard Dressing

Ingredients

  1. 3 tablespoons soy sauce
  2. 3 tablespoons rice vinegar
  3. 1 tablespoon mirin
  4. 1 tablespoon sake
  5. 2 teaspoons whole-grain mustard
  6. 3 garlic cloves, coarsely chopped
  7. 1/2 cup plus 1 tablespoon vegetable oil
  8. 1 medium seedless cucumber, peeled and halved crosswise
  9. One 3-inch piece of carrot, peeled
  10. One 3-inch piece of daikon, peeled
  11. 1 medium shallot, thinly sliced crosswise
  12. Four 6-ounce skinless grouper fillets
  13. Salt and freshly ground pepper
  14. 1 long red fresh chile, cut into long, fine strips
  15. Toasted sesame seeds, cilantro leaves and finely chopped chives, for garnish
