  5. 1/4 cup rice vinegar
  6. 1/4 cup fresh orange juice
  7. 2 tablespoons mirin
  8. 2 tablespoons dry white wine
  9. 1 tablespoon Sriracha chile sauce
  10. 1 1/2 cups heavy cream
  11. Salt and freshly ground pepper
  12. Six 6-ounce, 1-inch-thick tuna steaks
