Ingredients

  1. 1/2 cup low-sodium soy sauce
  2. 1/2 cup mirin
  3. 1/2 cup fresh lime juice (from 3 limes)
  4. 1/4 cup light brown sugar
  5. 1/4 cup thinly sliced fresh ginger
  6. 2 garlic cloves, thinly sliced
  7. 3 pounds pork belly, skin removed
  8. 1 tablespoon vegetable oil
  9. 1 large onion, coarsely chopped
  10. Salt
  11. 2 cups low-sodium chicken broth
  12. 2 scallions, thinly sliced
  13. Pickled Radishes and steamed rice, for serving
