Ingredients

  1. 2 cups water
  2. 4 ounces smoky bacon, sliced crosswise into 1/4-inch strips
  3. 8 pounds collard greens, stems and tough inner ribs discarded
  4. 2 large onions, chopped
  5. 3/4 cup coarse dry bread crumbs
  6. 1/4 cup plus 2 tablespoons freshly grated Parmesan cheese
  7. 1 tablespoon minced parsley
  8. 1 teaspoon minced sage
  9. 1 garlic clove, minced
  10. 1 tablespoon extra-virgin olive oil
  11. 2 cups heavy cream
  12. Salt and freshly ground pepper
  13. 3 large eggs, lightly beaten
