Veal Croquettes with Marsala
Ingredients
- 1 pound ground veal
- 1 small McIntosh apple--peeled, cored and cut into 1/4-inch dice
- 1/3 cup walnuts, coarsely chopped
- 1 ounce Bel Paese or Taleggio cheese, cut into 1/4-inch dice (about 1/4 cup)
- 1 large egg, lightly beaten
- 2 tablespoons dry bread crumbs
- 4 sage leaves, chopped
- Salt and freshly ground white pepper
- All-purpose flour, for dredging
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- 1/3 cup sweet Marsala wine
