Rio Rancho Steaks with Ancho Butter

Ingredients

ANCHO BUTTER

  1. 2 ancho chiles, stemmed and seeded
  2. Boiling water
  3. 1 tablespoon olive oil
  4. 1/4 medium onion, coarsely chopped
  5. 6 garlic cloves, coarsely chopped
  6. 2 sticks (1/2 pound) unsalted butter, softened
  7. 2 teaspoons fresh lime juice
  8. 1/2 teaspoon kosher salt
  9. 1/4 teaspoon pure maple syrup

STEAKS

  1. 1/2 cup olive oil
  2. 1/4 cup unsulphered molasses
  3. 1/4 cup sherry vinegar
  4. 2 teaspoons pure chile powder, preferably ancho
  5. Six 1 1/2 -pound bone-in rib-eye steaks, about 3 inches thick
  6. Salt and freshly ground pepper
