Le Grand Aioli

Ingredients

  1. 2 pounds white fish fillets, such as cod or grouper, about 1 inch thick
  2. Coarse sea salt
  3. 1 cup dried chickpeas (7 ounces)--picked over, rinsed, soaked overnight and drained
  4. 2 bay leaves
  5. 2 garlic cloves
  6. 8 medium artichokes
  7. 1/2 lemon
  8. 8 large hard-cooked eggs, peeled
  9. 1 1/2 pounds medium beets, boiled and peeled (see Note)
  10. 1 1/2 pounds medium carrots, peeled and boiled
  11. 8 boiled medium yellow-fleshed potatoes, such as Yellow Finn or Yukon Gold
  12. 1 cauliflower, cut into large florets and boiled
  13. 1 pound green beans, boiled and refreshed in cold water
  14. Aromatic Snails
  15. Classic Aioli or Aioli-Style Mayonnaise
