- 1 small head romaine lettuce, cut crosswise into 1/2-inch strips (about 1 quart)
- 2 carrots, grated
- 1 cucumber, peeled, halved, seeded, and diced
- 1/2 cup lightly packed cilantro leaves
- 1/4 cup chopped fresh mint
