Chicken and Potato Soup with Lemongrass

Ingredients

  1. 6 cups chicken stock or low-sodium broth
  2. 1 stalk of fresh lemongrass, cut into 2-inch lengths and crushed lightly
  3. Four 1/4-inch-thick slices of fresh ginger, lightly crushed
  4. 1 small jalapeño, thinly sliced crosswise with seeds
  5. 2 garlic cloves, thinly sliced
  6. 1 small onion, coarsely chopped
  7. 2 medium carrots, thinly sliced
  8. 2 celery ribs, thinly sliced
  9. Salt and freshly ground pepper
  10. 2 pounds large Yukon Gold potatoes, peeled and cut into 1 1/2-inch pieces
  11. 2 cups shredded roasted chicken
  12. 2 tablespoons thinly sliced mint
