Ingredients

  1. 2 packages active dry yeast
  2. 1/2 cup lukewarm water (about 110°)
  3. 1/3 cup sugar, plus a pinch
  4. 1 stick (4 ounces) unsalted butter, thinly sliced, plus 2 tablespoons, melted
  5. 1 cup warm milk
  6. 1 tablespoon honey
  7. 2 1/2 teaspoons salt
  8. 4 extra-large eggs, at room temperature, plus 1 extra-large egg beaten with 1 extra-large egg yolk and 1 tablespoon water, for glazing
  9. About 6 cups bread flour
  10. Cornmeal, for dusting
