- 2 tomatoes skin off, seeded and large dice
- 6 asparagus tips, blanched, shocked and split in half lengthwise
- 1 cup whole milk
- 1/2 cup heavy cream
- 3 medium eggs
- salt, pepper and nutmeg to taste
For garnish
- 1 lpound fresh tuna, cut in small, uniform pieces
- 1 cup white wine
- 1 cup water
- 1 teaspoon whole black peppercorns
- 3 allspice berries
- 4 tomatoes peeled, seeded and small dice
- 3 tablespoons capers
- 1 bunch watercress
- fresh chives
