- FOR THE TERRINE:
- 2 pounds fresh sardine fillets, (from about 4 pounds whole sardines) ***you can also use salmon fillets
- Salt
- Freshly ground white pepper
- 1/4 cup extra-virgin olive oil
- 8 leaves sage
- 6 sprigs thyme
- 4 sprigs rosemary
- 4 garlic cloves, peeled and crushed
- 3 pounds eggplant, trimmed, peeled, and cut into 1/2-inch thick slices (on the bias)
- 12 ounces piquillo or roasted red bell peppers
- 40 pieces TOMATO CONFIT:
- 3 tablespoons extra virgin olive oil
- Salt
- Freshly ground white pepper
- 3 cloves garlic, peeled, split, germ removed and finely sliced
- 10 basil leaves, torn
- 4 sprigs thyme, leaves only
- 2 bay leaves, broken
- 20 ripe plum tomatoes, peeled
- 1/4 to 1/2 teaspoon sugar
