Ingredients

  • 2 cups cooked and cubed butternut squash
  • 1 cup quinoa (made with low-sodium chicken or vegetable broth)
  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 4 garlic cloves
  • 1 red bell pepper, cut into chunks
  • 1 yellow squash, cut into chunks
  • 1 Anaheim Chili, seeded and diced
  • 1/2 cup fresh basil, chopped
  • Black pepper to taste
  • 4 tablespoons feta cheese
