- 4 Bell Peppers, red or green, seeded and each but into 6 long pieces
- 1 large Onion, or 2 medium, quartered or cut into 8 pieces
- 4 cloves Garlic, halved lengthwise
- 4 Fresh Bay Leaves
- 3 tablespoons Whole Coriander Seeds, coarsely crushed
- 4 Chile Peppers, fresh, or dried chillies, halved lengthwise with scissors but left attached at the stem
- 3 tablespoons Salt
- 2 tablespoons Honey
- 1⁄2 cup Water
- 1 quart White Vinegar
- 2 sticks Cinnamon
