Santa Fe Pork Stew

Ingredients

  • 3 tablespoons Olive Oil
  • 3 pounds Boneless Pork Shoulder, cut into 1 1/2 inch cubes
  • 2 12 tablespoons All-Purpose Flour
  • 2 Sweet Potatoes, Peeled and cut into 1 inch cubes
  • 1 12 cups Chicken Broth
  • 1 12 cups Dry White Wine
  • 12 cup Red Wine Vinegar
  • 12 cup Fresh Italian Parsley, chopped
  • 1 12 cups Onion, chopped
  • 6 cloves Garlic, Finely minced
  • 3 tablespoons Capers, drained
  • 1 tablespoon Ground Cumin
  • 12 teaspoon Ground Black Pepper
  • 2 cups Canned Black Beans
  • 1 teaspoon Ground Cumin
  • 12 cup Fresh Cilantro, chopped

Description

This Is A Southwestern, Salty (due To Capers), Tasty Stew With A Variety Of Textures And Flavor. Cornbread Goes Nicely With It.
