- 3⁄4 cup Roasted corn
- 2 Green Chile Peppers, roasted or fresh, of choice, seeded and chopped
- 2 tablespoons Lime Juice, 2-3
- Sea Salt, to taste
- 1 teaspoon Chili Powder, 1-2
- 1 teaspoon Cumin
- Cinnamon
- 2 tablespoons Fresh Cilantro, or Italian parsley, chopped
- splash Extra Virgin Olive Oil, to moisten rice
- 1 can Fire Roasted Tomatoes, with green chiles, with juice
