Ingredients

  • 1 tablespoon Butter
  • 14 cup Poblano Pepper, finely diced
  • 1 14 pounds Crab Meat, picked clean and squeezed dry
  • 1 cup Mayonnaise
  • 14 cup Dijon Mustard
  • 14 tablespoon Garlic, chopped
  • 18 teaspoon Dried Cilantro
  • 1 teaspoon Lime Zest
  • 14 teaspoon Cayenne Pepper
  • 12 teaspoon Pepper
  • 12 teaspoon Salt
  • Saltine Crackers, 1 sleeve, crushed into fine crumbs
  • 12 tablespoons Unsalted Butter, 2 tbs per crab cake
