Turkey Thyme Loaf

Ingredients

1-1/4 lb ground turkey 1/2 c plain dried bread crumbs 1/2 c sliced green onions 1/2 c chopped celery 1/2 c peeled, diced apples 1 egg or 2 egg whites, slightly beaten 1 T fresh thyme leaves, or 3/4 t dried 2 t chopped fesh sage, or 1/2 t dried 1 t salt 1/2 t pepper lettuce leaves fresh thyme leaves, lemon and apple slices for garnish Glaze: 3 T Dijon mustard 3 T lemon juice 2 T brown sugar Mix turkey, bread crumbs, onions, celery, diced apples, egg, thyme, sage, salt & pepper. Press into 8x4&334; loaf pan. Bake 350F for 55 min.Drain; let stand 5 min. Combine glaze ingred. in small saucepan; heat until sugar melts and mixture is smooth. Slice loaf and arrange on lettuce-lined serving platter; drizzle with glaze. Garnish as desired with fresh thyme, lemon and apple slices. Serves 8 It smells wonderful while it's cooking; the glaze really adds a great 'zip' to it and it makes yummy sandwiches the next day. If you have little ones, you could serve the glaze on the side; that's what we do
