Ingredients
Fry sliced zucchini in a little olive oil in a skillet over med-high heat until golden, and season with salt and pepper. Dice a tomato and mix it with a little chopped parsley, cilantor, and /or dill. Spread pita bread with Tartar Sauce, add zucchini, then add the tomato-herb mixture. Top with extra sauce and serve. Tartar Sauce1/2 cup pine nuts, almonds, walnuts, or hazelnuts1 slice sturdy white bread, crusts removed1 garlic clovesalt2 tbl lemon juicechopped parsleypaprika or cayenneToast pine nuts in skillet until golden. For other nuts, lightly roast in a moderate over 6 to 8 minutes. Moisten bread with water and set aside to soak. In mortar, mash garlic, 1/4 tsp salt, and nuts until smooth. Squeeze bread and add it to the mixture with 1/2 cup water. Work by hand, in blender, or food processor until sauce is smooth and thin, adding more water if needed. Season with lemon juice and taste fo rsalt. Pour in a bowl and sprinkle with parsley and paprika. Keeps 2-3 days
