Ingredients
2 small onions, chopped 3 small garlic cloves, chopped 2 tsp vegetable oil 1/2 cup low-sodium chicken broth 2 cups broccoli florets 2 cups cauliflower florets 3 whole carrots cut into 2X1/4' strips 1 cup mushrooms 1/2 ts pepper 3/4 cup low fat cheddar or american cheese, shredded 2 tbsp parmesan cheese paprika In a skillet, saute onions and garlic cloves in 2 tsp of oil until brown, add 1/2 cup low-sodium chicken broth, broccoli, cauliflower, carrots, mushrooms and pepper. Cook until vegetables are tender. Remove from heat and drain any liquid from veggies. Transfer to 1 qt casserole dish that has been sprayed with pan spray. Sprinkle top of vegetables with 3/4 cup cheese and 2 tbsp parmesan cheese. Sprinkle top with paprika. Bake uncovered in oven at 350F until cheese is melted. (15- 20 minutes)
