CREAMY MUSTARD SAUCE:
  • 1 cup sour cream
  • 2 tablespoons yellow mustard
  • 1 tablespoon coriander seeds, ground in a mortar and pestle
  • 1 teaspoon honey
  • 4 sweet gherkins, minced
  • Salt
ORANGE CHILI SAUCE:
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 1 1/2 teaspoons white wine vinegar
  • 1 green finger chile, roughly chopped
  • 1 red finger chile, roughly chopped
  • 1 large orange, peeled and roughly chopped
  • 1/4 red onion, roughly chopped
PINEAPPLE CHUTNEY:
  • 1 tablespoon vegetable oil
  • 1/2 red onion, finely diced
  • 1 pineapple, peeled and cut into a large dice
  • 1/2 cup sugar
  • 1/4 cup white wine vinegar
  • 1 teaspoon fennel seed
  • Salt
SHREDDED ZUCCHINI SALAD:
  • 1/4 red onion, julienned
  • Juice of 2 limes
  • 1 teaspoon salt
  • 1 cup cherry tomatoes, cut in half
  • 1/4 cup fresh cilantro leaves, roughly chopped
  • 1 large zucchini, grated
