1 large red potato 2 teaspoons vegetable oil 1/4 pound fresh shiitake mushrooms, stems discarded and caps finely chopped 1 small onion, finely chopped 2 garlic cloves, minced 1 pound ground turkey breast or 1 pound skinless turkey breast, cut into 1-inch  cubes 2 ounces cured ham, such as prosciutto, trimmed of visible fat and finely chopped 1 tablespoon low-fat (1%) milk 1 tablespoon finely chopped fresh flat-leaf parsley 1 teaspoon finely chopped fresh sage 1/2 teaspoon finely chopped fresh thyme or pinch of dried 1 teaspoon salt 1/4 teaspoon freshly ground black pepper
