Shrimp And Couscous Salad

Ingredients

For the dressing

1 cup plain yogurt, most of the liquid drained
1/2 cup extra virgin olive oil
2 teaspoons ground cumin
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil

For the salad

1 1/2 cups coucous
1 1/2 cups water
1 tablespoon olive oil
1 can garbanzo beans, 15 oz, drained
1/4 cup dried apricots, diced
1/2 cup cucumber, peeled, seeded and diced
1/4 cup red onion, small dice
3/4 pound cooked, peeled, and deveined shrimp (31/35 per pound), cut in half lengthwise
