Ground Beef and Lamb Kabobs
Ingredients
- 2 large egg yolks
- ½ teaspoon [3 mL] dry mustard
- ½ teaspoon [3 mL] salt
- ½ teaspoon [3 mL] cayenne, or to taste
- 2 teaspoons [10 mL] fresh lemon juice
- 1 teaspoon [5 mL] palm (dendê) oil
- 1½ cups [360 mL] olive oil
- 1 tablespoon [15 mL] fresh pineapple juice
- 1 teaspoon [5 mL] hot water
- ¼ cup [60 mL] minced fresh pineapple
- 1 large sweet potato, unpeeled, cooked until very tender, and puréed to a smooth paste
- 1 egg yolk, lightly beaten
- 1 tablespoon [15 mL] melted butter
- 2 to 3 cups [480 to 720 mL] fine corn flour, as needed to form a dough
- 1 tablespoon [15 mL] olive or palm (dendê) oil
- 1 onion, minced
- 3 garlic cloves, minced
- 4 hot chile peppers, minced, or to taste
- 1 pound [450 g] fresh tuna fillet or steak, grilled over charcoal to medium rare and cooled and sliced
- 2 plum tomatoes, finely diced
- 1 teaspoon [5 mL] salt
- Vegetable oil with a few drops of palm (dendê) oil added for color, for deep-frying
- Minced chives, for garnish
