This is a slight variation of the classic Lorraine Quiche recipe, using low-fat milk instead of cream (only because I usually have milk lying around the refridgerator and can't say the same for cream) and I wanted to make use of my pot of basil which has been growing rather nicely.Ingredients
- 1 pack store bought shortcrust pastry
- 6 slices of back bacon, chopped or hand shredded into small pieces
- 200g mushrooms, sliced
- 1 handful of sweet basil leaves
- 1 big yellow onion
- 1 cup low fat milk
- 3 eggs
- 300g cheddar cheese
