- 1 cup sweet potato, peeled and cubed
1/2 red capsicum, diced
1 cup green beans, trimmed and chopped
2 cups water
1 tablespoon vegetable stock powder
1 tablespoon ground cumin (note 1)
2 teaspoons ground cinnamon (note 1)
1/2 teaspoon ground tumeric (note 1)
(Note 1: For a short cut, you could use a pre-mixed Moroccan spice)
1 cup of CousCous
1/2 red onion, diced
8 cherry tomatoes, quartered
1 handful corriander
lime juice to taste

Moroccan CousCous Salad - The Flavour Of CousCous Is Done By Flavouring The Stock That It Is Soaked In. I Have Used Moroccan Spices Here, With A Mixture Of Cooled Vegetables And Salad Ingredients. Feel Free To Play Around.
