Singapore Style Chicken Satay

Ingredients

  • 8-10 chicken thigh fillets or use chicken mini fillets
  • for SATAY SAUCE
  • 1/2 cup peanut butter crunchy
  • 1 cup chicken stock
  • 2 tabs sherry
  • 1 tabs soy sauce
  • 2 tabs lemon juice
  • 1 tsp ginger paste
  • 2 tabs runny honey
  • 1 onion finely chopped
  • 1 clove garlic, crushes
  • good pinch coriander
  • good pinch cumin
  • 1 tsp brown sugar
  • dash hot chilli sauce
  • for CUCUMBER & CARROT DIPPING SAUCE
  • 1/4 cup white sugar
  • 1/4 cup white wine vinegar
  • 1/4 cucumber, extremely finely diced
  • 1/4 cup carrot, peeled and extremely finely diced
  • cucumber slices for garnish (optional)
  • pineapple chunks for garnish (optional)

Description

Skewers Of Chicken Marinated, Grilled And Served With A Peanut Dipping Sauce And Sweet Cucumber And Carrot Dipping Sauce. This Can Also Be Adapted To Go With Beef, Pork And Prawns. Makes A Lovely Starter To A Chinese Or Thai Banquet.
