- handful iceberg lettuce or little gem (white centre), finely chopped
- 2 tablespoons finely chopped parsley
- seasoning
- 1 egg beaten
- 1 slice bread, crust removed and lightly soaked in milk (squeeze out excess)
- plain flour
- olive oil
- 1/2 teaspoon smoked paprika
- 1/2 onion finely chopped
- 125ml chicken stock
- decent splash white wine or sherry
- small pinch saffron
- 1 tablespoon finely chopped parsley (extra)
