Ingredients

  • 1 tbsp sunflower oil
  • 1 onion, chopped
  • 2 garlic cloves, sliced
  • 2.5 cm (1 in) piece of fresh root ginger, peeled and finely chopped
  • 2 tbsp garam masala
  • 1 tbsp tomato purée
  • 450 g (1 lb) broccoli or cauliflower, or a mixture of the two, cut into small florets
  • 450 ml (15 fl oz) vegetable stock, preferably home-made
  • 55 g (2 oz) red lentils, rinsed
  • 6 eggs
  • 225 g (8 oz) frozen peas
  • 3 tbsp chopped fresh coriander
  • coarsely grated zest of 1 lime (optional)
  • salt and pepper
  • To garnish:
  • lime wedges
  • sprigs of fresh coriander
