Bloody Mary Roast Beef

Ingredients

  • lean boned and rolled Scotch Beef rib joint (sirloin or topside could also be used)
  • Oven roasted tomatoes:
  • 450g (1 lb) cherry tomatoes
  • 2 tablespoons olive oil
  • 2 whole red chillies, halved and deseeded
  • 2 cloves garlic, squashed
  • Bloody Mary glaze:
  • 3 cloves garlic, chopped
  • 1 red chilli, deseeded and finely chopped
  • salt and black pepper to taste
  • 150ml (¼ pt) passata or tomato juice
  • 1 tablespoon olive oil
  • Bloody Mary salsa:
  • 2 tomatoes, finely chopped
  • 1 teaspoon sweet chilli sauce
  • 1/4 of a red chilli, deseeded and finely chopped
  • 2 tablespoons tomato ketchup
  • 1/2 a lime, juiced and zested
  • 2 tablespoons vodka
