Ingredients

  • For the Bread Cases:
  • 24 slices day-old white sandwich bread
  • 60 g butter, melted
  • For the Sauce:
  • 1 cup milk
  • 1 small bay leaf
  • 2 thin slices onion
  • 5 black peppercorns
  • 1 small stick celery, sliced
  • 30 g butter
  • 1 1/2 tablespoons plain flour
  • Salt and freshly ground white pepper
  • For the Filling:
  • 36 small cooked prawns, peeled and chopped OR
  • 200 g button mushrooms, thinly sliced and cooked OR
  • 1 bunch fresh asparagus, trimmed, cooked and chopped, or 1 x 340 g tin asparagus spears, drained and chopped
  • 1/4 cup chopped chives, to garnish
