Picnic Roll

Ingredients

  • FOR THE DOUGH:
  • 200 g (3/4 cup) low-fat ricotta cheese
  • 250 g (2 cups) plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 80 ml (1/3 cup) sunflower oil
  • FOR THE FILLING:
  • 1 soft bread roll
  • 2 tablespoons canola oil
  • 150 g diced bacon
  • 2 onions, finely diced
  • 1 clove garlic, finely chopped
  • 400 g mixed minced meat such as pork and chicken or beef and lamb
  • 1 egg
  • 1 teaspoon each of fresh basil, oregano and thyme leaves
  • Pinch of cayenne pepper
  • 200 g (1 1/3 cups) pickled red capsicum strips
  • 1 egg yolk and 2 tablespoons milk, for brushing
