3 kg Australian beef brisket
1 tbsp Pepper Corn
1 tbsp Fennel Seed
2 pc Chinese Cardamom
2 pc Tangerine Peel (soak into the water)
50 g Rock sugar
2 tbsp Dark Soy
100 ml Light Soy
125 ml Yellow Rice Wine
100 ml Port Wine
10 g Fresh Ginger
1 litre Demi Glaze
Braised Croquette
1 kg Shredded braised brisket
100 g Shitake mushroom
100 g Cheddar Cheese
300 g Bread crumbs
2 pc Egg
300 g Flour
400 g Carrot (peel and boil until soft and strain)
Salt seasoning
White pepper seasoning
10 ml Orange Juice
500 g Capellini Pasta
50 g Garlic (slice)
50 ml Chile Flake
50 g Italian Parsley
100 ml Olive oil
Salt and Pepper
20 pc Brocoli Flower (blanche and sautee, season well)
20 pc Kalian (blanche and season)
Bourguignon Jus
1 litre Beef stock
300 ml Red wine
200 g Mushrooms
100 g Shallots confit
50 g Dried Beef
10 pc Fresh Thyme Basil Leaf (deep fried for garnish)
