- ¾ tsp. dry mustard
- salt to taste
- freshly ground black pepper to taste
- ½ small cucumber, peeled, seeded, and finely chopped
- 4 scallions, finely chopped, including 2 inches of the green tops
- ½ C. finely chopped parsley
- Sweet Hungarian paprika
- salad greens
