Expert Chicken Stew Recipe

Ingredients

  • 1 rooster, cut up
  • 1/4 C. oil (peanut is good for not smoking easily; olive tastes
  • magnificent)
  • 1 onion, chopped
  • Several cloves garlic, minced
  • 2 qts. water
  • Tie in a square of cheesecloth:
  • 10 whole black peppercorns
  • 3 whole allspice
  • 3 whole coriander seeds
  • 2 whole cardamom pods, cracked
  • 2 whole cloves
  • 1 tsp. cumin seeds
  • 1 tsp. dill seeds
  • 1 sprig rosemary
  • 1 sprig sage
  • 2 sprigs thyme
  • 1 bay leaf
  • 2 large, fat carrots, peeled and cut into chunks
  • 2 large, fat parsnips, peeled and cut into chunks
  • 1-2 turnips, cut into wedges, unpeeled if the skin is nice and not waxed
  • Several stalks celery, sliced
  • 1 bunch fennel, sliced
  • 2-3 small onions, halved vertically
  • Several small red-skinned potatoes, scrubbed and trimmed but not peeled
  • 1 C. freshly shelled green peas
  • 1 C. cooked chickpeas or great northern beans
  • Several mushrooms, quartered
  • Roux of 2 Tbs. unsalted butter and 2 Tbs. flour
  • Generous pinch saffron
  • Handful flat-leaf parsley, chopped
  • Salt
