Ingredients
- 1 rooster, cut up
- 1/4 C. oil (peanut is good for not smoking easily; olive tastes
- magnificent)
- 1 onion, chopped
- Several cloves garlic, minced
- 2 qts. water
- Tie in a square of cheesecloth:
- 10 whole black peppercorns
- 3 whole allspice
- 3 whole coriander seeds
- 2 whole cardamom pods, cracked
- 2 whole cloves
- 1 tsp. cumin seeds
- 1 tsp. dill seeds
- 1 sprig rosemary
- 1 sprig sage
- 2 sprigs thyme
- 1 bay leaf
- 2 large, fat carrots, peeled and cut into chunks
- 2 large, fat parsnips, peeled and cut into chunks
- 1-2 turnips, cut into wedges, unpeeled if the skin is nice and not waxed
- Several stalks celery, sliced
- 1 bunch fennel, sliced
- 2-3 small onions, halved vertically
- Several small red-skinned potatoes, scrubbed and trimmed but not peeled
- 1 C. freshly shelled green peas
- 1 C. cooked chickpeas or great northern beans
- Several mushrooms, quartered
- Roux of 2 Tbs. unsalted butter and 2 Tbs. flour
- Generous pinch saffron
- Handful flat-leaf parsley, chopped
- Salt
