Ingredients

Vietnamese Marinade

  • 1/2 cup dry sherry
  • 1/2 tablespoon black peppercorns
  • 1/2 teaspoon whole cloves
  • 1/2 tablespoon grated ginger
  • 1/2 teaspoon coriander seeds, crushed
  • 1/4 teaspoon whole allspice berries
  • 1/2 large onion, chopped
  • 1 garlic clove, peeled, minced
  • 2 1/2 tablespoons fish sauce
  • juice of one lime
  • grated zest of 1/2 lime
  • 1/2 tablespoon Hoisin sauce
  • 1/2 large jalapeno, seeded, chopped
  • 1/2 tablespoon brown sugar
  • 3 sprigs Thai basil, torn into pieces, and chopped for garnish
  • 3 sprigs fresh coriander, chopped, for garnish
  • coarse salt freshly ground black pepper

Steak

  • 1x24 ounce flank steak

  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 tablespoon chopped fresh coriander
  • pinch grated fresh ginger
  • coarse salt freshly ground black pepper
