Ingredients

  • 2 large Dungeness crab
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 2 tablespoons medium curry powder
  • 2 tablespoons finely minced ginger
  • 1 cup chopped fresh coriander leaves
  • 2/3 cup coconut milk
  • 1/2 cup fresh breadcrumbs, for forming the crab cakes
  • 4 eggs
  • 1 cup flour
  • 2 cups Japanese panko breadcrumbs, for coating the crab cakes
  • 1 cup vegetable oil, for frying
  • Salt and pepper, to taste
