- 5 pounds chicken bones, well rinsed (2.5 kg)
- 20 cups cold water (5 L)
- 2 carrots, chopped (about 8 ounces)
- 2 onions, chopped (about 1 pound/500 g)
- 2 stalks celery, chopped (about 4 ounces/115 g)
- 1 leek, sliced (about 4 ounces/115 g)
- 3 sprigs fresh Italian parsley
- 1 sprig fresh thyme
- 2 bay leaves
- 1 teaspoon whole black peppercorns (5 mL)
- 3 cloves garlic, smashed
Dumplings
- 1 1/2 cups flour (375 mL)
- 1/2 cup cornmeal (125 mL)
- 2 tablespoons chopped fresh dill, optional (30 mL)
- 2 teaspoons baking powder (10 mL)
- 1 teaspoon dry mustard (5 mL)
- 3/4 teaspoon salt (4 mL)
- 1 1/4 cups light cream (310 mL)
